Wordless Wednesday: Canning

My Italian grandmother of a husband has been at it again. A bushel of tomatoes, and a half a bushel of peaches, have become:

  • Tomato sauce (a/k/a pommarola)
  • Halved tomatoes packed in puree
  • Bolognese sauce
  • Tomato puree (1 jar)
  • Peach halves in light syrup
  • Spiced peach butter
  • Peach syrup

    my neighbor brought by more tomatoes yesterday, mentioning there are more in the pipeline, far more than he can eat. i said, "you should can these!" and he said, "do you know how?" um, no.

    we reached a general agreement that we are doofuses, but i have so many tomatoes now that i ought to at least figure out making sauce from scratch.

    I would particularly like the spiced peach butter, I think. Recipe, please?

    Have you ever read Barbara Kingsolver's Animal, Vegetable, Miracle? She talks about canning gallon after gallon of tomato sauce.
